Roasted tomatoes, onions, mushrooms and tofu

We finally turned the oven on this morning and roasted some tomatoes, onions, and mushrooms in olive oil and oregano. I longed for the grilled kabobs we had last night! I added some tofu sausage to round it out and Bob brought Tabasco to the table, and I brought ketchup. Some things never change.

None of that was my favorite thing on the table though. See above…
